The ketogenic way of eating is the latest craze that promises to do all of those things. But what is truly remarkable about keto, is that it really does work, and best of all there is no feeling of deprivation or that you’re on a diet. In fact, sugar cravings be gone!

Bella Los Angeles: What is the KETO diet for any of our readers who want to understand more about the benefits and why it works?
Kelly Boyer: A KETO DIET refers more specifically to a KETOGENIC DIET, which is a high fat, moderate-protein, low-carb diet. The GOAL is to get more calories from protein and fat than from carbohydrates. It works by depleting your body of its sugar storage so that it will start to breakdown fat and protein for energy, causing a state in the body known as KETOSIS.
It’s important to understand that KETOSIS is a normal metabolic process. When our bodies don’t have enough glucose for energy, they burn stored fat instead. This results in a build-up of an acid, called KETONES, within the body.
The presence of these ketones is an indication that your body is burning fat for energy. That is where the rubber meets the road! These ketones are essentially magic for your brain. They give you mental clarity and energy. The bonus of weight loss is receiving a lot of attention lately, but ketosis is also beneficial for people suffering from chronic conditions, particularly insulin, neurological and metabolic related. Recent studies even show us that ketones help fight cancer.
While most diets restrict certain foods and portions, the ketogenic diet is a little different in that you’re eating a certain way to get your body into a ketogenic state. It’s CHEMISTRY, not just a food plan.
The most critical success factor is to get your body into a state of ketosis. This is typically achieved over 2-7 days of complete carbohydrate elimination (no fruits, vegetables, grains, sugar, alcohol, etc.) to help turn your body into a fat burning machine. BLA: Why did you feel it was important to introduce KETO now?
KB: KETO is something that has worked really well for me. I have a lot of spine issues, which preclude the kind of working out I like to do. I gained 20lbs last year and was able to lose all of it in 10 weeks on a really enjoyable keto plan. Then I set out to research the how and the why of it well before I felt comfortable introducing it to my client base.
I didn’t want it be something that was fad-like or temporary. I believe it’s here to stay. BLA: How has PALETA been able to sustain as one of the original farm-to-table meal delivery businesses in Los Angeles after all the years?
We have definitely had some rough years! Even though we were one of the top 3 to launch in LA, there are a lot of mom and pop meal delivery companies to choose from now. Meal kit companies like Blue Apron appeal to a lot of people, but that is not our model. We will continue to provide PREPARED meals in order to control portion consumption and offer convenience and time savings. Plus, immediate gratification meal delivery companies like POSTMATES or UBER EATS (of which I am also a fan!) are also competing for our clients’ EATING DOLLARS. But, that’s okay! We are focused on lifestyle and ongoing health and believe these other companies serve a different, but valued purpose.
I also believe we’ve stayed nimble throughout the years. We don’t jump on every fad diet bandwagon. Keto is a great example. It’s not new, but I wanted to test it and test it and test and personally experience myself before I really understood how it worked, what it felt like, what it tasted like, what the upsides are, and what potential downsides could be. It makes my own eating a little schizophrenic, but I can’t launch something new without believing in it with my own heart. I think staying true to our philosophies, yet being flexible with new learnings, has allowed us to keep our clients’ interests.
BLA: What differentiates the PALETA experience?
KB: We believe we separate ourselves from the pack in a few ways.
TASTE – I’m a classically trained French chef myself, so I am a live to eat person. My Head Chef comes from fine dining at Melisse so his palate and eye are very sophisticated. I personally design all menus based on seasonality and our practice and philosophy has been to be 95% gluten/dairy/soy/sugar free since I founded Paleta. We’ve coined the phrase “stealthy healthy” because we create classic and comfort food dishes that you would never know are free of gluten, dairy, soy, etc. We never scrimp on quality ingredients and make huge efforts to source locally, organically and sustainably. If I don’t want to eat it, I can’t expect my clients to want to eat the food, so I take great care in focusing on variety, creativity and great taste.
PRESENTATION – Even our biggest competitors tell me our presentation beats everyone hands down. It costs us more to do it, but how we present our product is everything. If it doesn’t look good, they’re not going to want to eat it…especially if they’re on a restricted program of any kind. We use beautiful garnish like fresh edible flowers, sprouts, herbs, etc. I expect people to smile when they open up their containers.
DELIVERY – For the past few years we have developed a partnership with a WHITE GLOVE delivery service. They are our secret weapon. In some 50,000 deliveries, they only made 8 errors! That’s unheard of. The owner himself will get out of bed in the middle of the night to help a driver out if needed. This has increased our client retention rate dramatically. Nobody wants to open their door in the morning and NOT have their food be there. Unacceptable.
VARIETY – I have always known that one size does not fit all. That is why we continue to evolve and add or eliminate meal program types as new research and information is learned about nutrition. We started out initially as just providing a Mediterranean diet, now we offer Paleo/Gluten Free, Vegan, Vegetarian, Pregnancy Programs, Keto, Cleanses, and even a 14-Day Accelerated Weight Loss program called KICKSTART. We all need different things at different points in our lives and I aim to fill those needs.
GREEN – I built my business, and my physical kitchen, with the foundation that we would do our best to ensure we mitigate our carbon footprint as much as possible. I built my kitchen to LEED specifications and standards, we use packaging that is either recyclable, bio-degradable, or bio-compostable. And, we’ve planted thousands and thousands of trees over the years to reduce the impact on our planet.
BLA: What is your background and how did PALETA come to be?
KB: I actually started PALETA in my kitchen in 2006! My goal was to deliver clients healthy twists on haute cuisine with ingredients sourced from local farms, cruelty-free ranches, and responsible fisheries, a mission we’ve held to all these years. As a survivor of late stage terminal cancer, I made it my mission to introduce the world to a healthier lifestyle through the convenience of daily home meal delivery.
After graduating with honors from the Le Cordon Bleu culinary arts program, I decided to apply my cooking techniques to create more healthful fare. Friends started asking me to cook for them, and then referred me to their friends, relatives, physicians, personal trainers, and my little passion project became my life’s calling. Before PALETA, I graduated with honors from Northwestern University’s masters program in Business and Organizational Development, was a Human Resources executive at a few large companies, but focused almost exclusively on the entrepreneurial aspects of each of those businesses. Go figure!
I did experience a life-changing event when diagnosed with a rare advanced form of terminal ovarian cancer at the age of 21. But, with the love and support of family and friends, I beat it and it changed the course of my life forever. Learning to focus more on body and mind and overall health, and enjoying the everyday experience of total body fitness translated very well to HR because I found joy in working to improve the overall conditions and experience of whatever work environment I was in, and thus the results!
After I retired from corporate America, I was really blessed to be able to reinvent myself in a way that could help me grow and help improve so many lives. My favorite part of the job is when clients tell me about their struggles and successes. I love hearing that they’ve reached a particular goal, whether that be losing weight, getting properly nourished through chemotherapy, having a healthy pregnancy, lowering their cholesterol, gaining muscle mass, or just saving them time to enjoy their lives outside of the kitchen…I love all of it!
